It is very dependant upon the type of use and there is a lot of setup details that it is vital to get correct to ensure maximum performance.
Large selects and reports can have an adverse effect, whereas record data entry is less expensive.
That being said we have setup over thirty of our customers on Citrix of various flavours and as a rule of thumb a single PIII 1GB RAID server box (we use Dell PowerEdge if given the choice) will support 15/20 sessions ok (this is based mainly on OI 16bit and/or AREV sites). The Microsoft figures should be ignored!
Load balanced solutions are very effective, especially when you have a mix of user types as Citrix will spread out the users based on performance cost rather than simply number of sessions.

You're running fast links.

You're running with lots of RAM.
We'd anticipate 50-60+ users before contention became an issue. If we had over a hundred users we'd be fairly confident with this setup.
Pay extra attention to virus checkers (*.OV files) and background tasks, as well as printer spooling setups. Network card consistency also provides advantages in terms of network segment loading.
