My understanding is that the biggest difference is that there is no automatic mechanism for getting an XP Home machine to join an NT Domain. If this is a requirement, you pretty much need to go with XP Professional. If you will be installing a Win2k server, then you pretty much have to have XP Pro.

On general principles, I would recommend XP Pro for the office. XP Home is exactly that, a home user version of the OS. I've been running XP Pro on my personal PC for about 4 months now, and have had no problems whatsoever.
