We have a client (OI7.x) running on Windows Server 2008x64 (w/Windows 2.1). No problem with HP server.
And a couple of clients (OI7.x) on VM (not familar with Hyper-V technology tho).

You can run OI 7.x on your XP workstation from a network share on the 2008 server. The server should be using the Universal Driver 4.6. This is as a supported configuration.
Hyper-V is similar to the VMWare ESXi hypervisor - slightly different implementation. ESXi is a bare metal hypervisor where Hyper-V uses a special windows kernel to be the hypervisor. There isn't specific support for the Hyper-V environment but I can't think of a reason why it wouldn't work with the Universal Driver 4.6
